Peru meets Seychelles

Constance Ephelia is pleased to welcome Chef Daniel Chavez, owner of OLA Cocina Del Mar and founder of TONO Cevicheria, the first authentic Peruvian cevicheria in Singapore.

Chef Chavez has worked in Spain, with the avant-garde Catalan chef, Santi Santamaria in Can Fabes restaurant where he learned about the importance of seasonal produce. It was also the place where his creativity started to flourish. He then went to open Ossiano in Dubai and Santi in Singapore for Chef Santamaria.

His dishes are tasty, light and refreshing to the palate, with ingredients that complement and highlight the natural flavours of the produce. Some plates are reflective of his training in Spanish cuisine, others a homage to Peru.
