Constance Festival Culinaire 2027: 20th Edition Preview

Twenty years ago, a culinary celebration was born in Mauritius, at Constance Belle Mare Plage.

Today, its spirit lives on, stronger than ever: bringing exceptional people together, inspiring new generations and creating moments that stay with us.

As we look ahead to the 20th Constance Festival Culinaire, the first highlights reflect that same spirit. Former winners will return, Constance Le Chaland will join the competing teams, and a new Service Arts Trophy will recognise the craft of hospitality beyond the kitchen.

Taking place from 19 to 27 February 2027 at Constance Belle Mare Plage, Constance Prince Maurice and Constance Le Chaland in Mauritius, the festival will bring Constance Hotels & Resorts’ teams together with leading chefs, pastry chefs, sommeliers and service professionals. For this anniversary edition, the pleasure of reunion sits alongside the opportunity to learn from one another.

Familiar names, fresh exchanges
Régis Marcon
, three-Michelin-starred chef and 1995 Bocuse d'Or winner; Pierre Hermé, 2016 World’s Best Pastry Chef; Marc Hoellinger, President and CEO of Maison Deutz; Cyril Lignac, acclaimed chef, restaurateur and pâtissier; Mercotte, renowned pastry expert, author and judge of Le Meilleur Pâtissier France; Jay Boyle, three-Michelin-star restaurant Maaemo in Norway; Ronni Mortensen, three-Michelin-star restaurant Geranium in Denmark and 2021 Bocuse d'Argent winner; Olivier Poussier, 2000 World’s Best Sommelier; Andreas Larsson, 2007 World’s Best Sommelier and Raimonds Tomsons, 2023 World’s Best Sommelierare are among the names announced for the anniversary jury.

Their expertise spans gastronomy, pastry, wine and hospitality, the disciplines that meet throughout the festival.

A return to the competition, a new team at the table
Former winners will return to compete and reconnect with the Constance teams. Their presence carries forward a tradition that has shaped the festival since its beginnings: bringing people together to share what they know and discover another way of working.

Constance Le Chaland’s arrival brings the number of competing teams to seven. It joins Constance Belle Mare Plage and Constance Prince Maurice in Mauritius, Constance Lemuria Seychelles and Constance Ephelia Seychelles, Constance Moofushi Maldives and Constance Halaveli Maldives.

The art of service takes its place
For the 20th edition, the Jars Art de la Table Trophy will become the Service Arts Trophy. The expanded competition will recognise sommeliers, bartenders and table-service professionals, giving greater prominence to the skills that shape a guest’s experience at the table.

Longstanding partner Champagne Deutz will continue its involvement through the Deutz Trophy, where the focus is on the precision and harmony of food and champagne pairings.

Sharing a craft
“At Constance Hotels & Resorts, gastronomy is an essential part of the experience we create for our guests. Constance Festival Culinaire brings this commitment to life, placing our chefs, sommeliers and service teams at the heart of an exchange with leading figures in international gastronomy,”
says Jean-Jacques Vallet, CEO of Constance Hospitality.

And we're just getting started
The festival’s roots remain in Mauritius, where local ingredients and the culinary traditions of the Indian Ocean meet influences from Asia, Africa and Europe. What began at Constance Belle Mare Plage continues through the people who share their craft and pass it on.

In February 2027, we will welcome familiar faces and new talents for the 20th edition. There will be reunions, new perspectives and more to learn from one another. The celebration continues.
