On 18 August, the serene shores of Constance Prince Maurice will host a rare gastronomic event: an exclusive wine pairing dinner crafted by Chef Jérôme Banctel, holder of three Michelin stars and Executive Chef of the celebrated Le Gabriel at La Réserve Paris. Known for his precision, creativity, and the ability to weave French culinary tradition with contemporary flair, Chef Banctel has become one of the most respected figures in haute cuisine. His dishes are lauded for their harmony of flavours, technical finesse, and a deep respect for the essence of each ingredient.

This one-night-only collaboration will be a meeting of artistry and terroir, a seamless dialogue between the freshest produce of land and sea, the mastery of a world-class chef, and the character of exceptional vineyards.
The journey begins at 7:00 p.m., in the very exclusive wine cellar of Constance Prince Maurice with the delicate effervescence of a Pierre Peters Réserve Magnum, an invitation to slow the pace and savour anticipation.

Blue Lobster – a symphony of almond milk gazpacho, fresh verbena, and white peach, paired with the mineral elegance of Saumur, Clos Romans, Thierry Germain, 2018.
Mahi-Mahi – infused with lime carrots and tangy ginger, its vibrant notes enhanced by Meursault, Les Tessons, Domaine Michele Bouzereau, 2020.
Poached Bresse Chicken – tender perfection bathed in supreme sauce with ginger and yellow lemon, accented by mushrooms “à blanc” and crowned with summer truffle. The pairing: IGP Vins de Pays de l’Hérault, Domaine de la Grange des Pères, 2019 or the Corsican charm of Clos Canarelli, Alta Rocca, Figari, 2019.
Tangy Calisson – a finale of creamy lime and caramelised almond crisp, kissed by the golden sweetness of Vin de Constance, Klein Constantia, 2020.
