Indonesian celebrity chef, restaurateur and media personality, Farah Quinn was here in Mauritius
for the 12th edition of Festival Culinaire Bernard Loiseau.
Also known for her culinary television shows, Farah was part of the jury members as well as
a special guest of the culinary event.
Here’s what she thinks of Constance Hotels and Resorts.
When /How did you learn about Constance Hotels and Resorts?
I learned about Constance Hotels and Resorts when I went to the
Seychelles where it was recommended by the trip organiser.
We actually stayed there for a couple of nights and I was very impressed.
What are your overall impressions on Constance Le Prince Maurice and Constance Belle Mare Plage?
My impression would be that I love the service and the staffs are so friendly, they are really nice and
the place is also beautiful. In my view, Constance Le Prince Maurice is completely different than Belle Mare Plage.
I think Belle Mare Plage is where I would come with my son. And then, Constance Prince Maurice is more romantic so that is definitely a place that I would go with my boyfriend.
Is there anything in particular that caught your attention at Constance Belle Mare Plage
and Constance Le Prince Maurice?
Yes, I think that it is the quality.
Then I would mention the environment, it is always so pretty, even the one that I visited in the Seychelles which had the same qualities.
It’s extremely special, it’s right by the water, you get the view, and it’s just fantastic.
Same with these places, I think that the environment is really pretty and the service is very good and the food, they take their culinary here very serious, so the definitely the quality of the food.
In which suite/villa did you stay? How did you find it?
Suite number 500.
There is plenty of room for all of us and we really have a nice view which is the ocean view
What do you think about the quality of food and drinks at the hotel/s?
The quality of the food is truly amazing and I really like the rum-based cocktails
that are designed by the mixologists here.
Twice, we also visited Le Prince Maurice for dinner and I think the quality of the food
and the presentation of the place is quite special.
What is your favourite restaurant/bar at Constance Belle Mare Plage and Constance Le Prince Maurice?
That has to be the Blue Penny Cellar, and Le Barachois.
Why did you decide to become a chef? What inspired you?
I have this passion since I was a little girl.
My mum is such a good cook and she used to teach me how to make things. She also used to take courses.
I would pay attention to what she was learning in those courses since I was right there next to her.
I carefully watched how they prepared things and then tried it myself at home.
So that is the first time that I fell in love with cooking.
Is there a chef you admire the most? Why?
The Chef that I admire the most is probably Chef Gaston Acurio, from Peru.
Because he made a big evolution in Peruvian food and Peruvian cuisine that nobody really heard about before. To become one of the most talked about cuisine in the world is extraordinary.
It’s all because of what he did so I find that very inspiring.
What is your favourite cuisine? Your favourite dish?
My favourite cuisine would definitely be Sumatran cuisine, especially from South Sumatra where I’m from and also Japanese food.
I love Japanese food and Japanese cuisine.
My favourite dish would be, well that would have to be sweet,
I have a sweet tooth and my background is pastry so yes, I am a little bit crazy about the pastries.
Well, my background is pastry art so my speciality I would say desserts.

What do you think of the Wine Cellar at Constance Le Prince Maurice and
Blue Penny Cellar at Constance Belle Mare Plage?
It is fantastic I love the wine cellar; I got to see a lot of the collections there.
I think it’s really nice to have such a selection.
When are you happiest at work?
I am always happy at work because to me although I take my work very seriously at times,
my work feels like play and play always feel like work. So I think, the fun part about my job is that I’m doing something that I truly love and it never really feels like work although when I am doing it I take it very seriously. I have discipline and I don’t mess around. I work hard but because I am doing something that I truly love.
It never really feels like work. So, I am always happy doing what I am doing.
What did you enjoy best during your stay with us/your ConstanceMoment?
I think my ConstanceMoment would be that I got the chance to join the sunshine, go to the kitchen, get out straight to the beach, play volleyball with all the other contestants and being able to do my morning runs and then back to the kitchen.
So it’s a combination between the kitchen and staying active.
For sure this stay was definitely priceless.
