A walk in Vendee with two star Michelin Chef and a biodynamic Winemaker

 

Thierry Drapeau from the two Michelin Starred Relais & Châteaux restaurant “La Chabotterie” and Thierry Bouchon from Domaine Saint Nicolas, the best wine grower in Vendée, were at both Constance Belle Mare Plage and Constance Le Prince Maurice recently.

Guests were treated to delicious dinners specifically crafted by Thierry Drapeau and Thierry Bouchon. Their ingenuity and the aroma of Vendee were pleasantly relished by our guests.

The region of Vendée plays a major part in the current and past French history of Gastronomy. Thierry Michon is the emblematic character of the Domaine Saint Nicolas and he runs this 32 hectares vineyard of biodynamic cultures (no synthetic chemical product since 1995) to extract the very best of every grape variety. It is with absolute respect for nature that Thierry Michon produces his exceptional wines.
