A celebration of passion and creativity at both
Constance Belle Mare Plage & Constance Prince Maurice.

Reassembling Michelin-starred Chefs from around the world and Constance Chefs from six
of our hotels in the Indian Ocean, this very coveted culinary event goes beyond food and wine.

 A week-long of lively competitions and swarming with culinary stars, 
2018 Festival Culinaire Bernard Loiseau is definitely not to be missed!

 

THE COMPETITIONS

Here's the winning dishes:

Canapé:
Taro vegetarian canape: In brown butter confit of taro with Safran, pear, raw palm heart and macadamia nuts.

Main Course-Seafood Shrimps:
OSO organic shrimps from Madagascar
Crispy cream cheese gnocchi, pineapple, papaya chutney and raw marinated gourd.
Spices: mustard seeds 6g, cumin seeds 10g, coriander seeds, fennel seeds, vanilla.

Main Course- Meat Pork
Iberico pork BBQ
Grilled back of Iberico pork with bell pepper jus, sweet potato cake,
red onions and fruit mix guacamole, traditional products for Mauritian bbq
in a modern way.

What a wonderful week it has been for all the participants of this magnificent 13th edition of Festival Culinaire Bernard Loiseau.

Rendez-Vous for the 14th edition, next year from the 23rd till the 31st of March 2018!

DEUTZ TROPHY

[Before THE CULINARY CONTESTS]

The competition reaches its climax as the six Michelin starred Chefs enhance this art and compete for the Deutz Trophy.
A canapé will have to be proposed by each chef to create a perfect pairing with the William Deutz Champagne.
