The third and final phase of the festival
was the grand finale on Saturday 20th March 2010. A
glamorous awards ceremony, followed by a gala dinner
orchestrated by guest of honor - Chef Patrick Bertron
(“3-star Michelin”), culminated in the announcement
of the winning tandem.

5th edition of the Culinary Festival Bernard Loiseau.
The festival once
again took place at the
5-star Constance Belle
Mare Plage Resort in Mauritius from 14 to 22 March
2010.
His binôme is the
“Chef de partie” at
Constance Belle Mare
Plage,
Patrick Travady.
Their winning menu included
the starter Cannelonni of Pineapple and Tuna with
Coconut Chutney, and main course Fillet of Bourgeois
with Spiced Onion Bread Crumbs.

Trial,
preparation and test of the new recipes and dishes by
the teams (1 European Chef and 1 Island Chef) allowing
them to perfect the dishes to be presented on the final
day of the competition.
Visiting the Port Louis market to trigger contact and
exchange of knowledge of the local produce among the
European Chefs and the cooks from Constance Hotels Experience.
Visit of Grand Bassin, Domaine St Felix and lunch at
Le Cerf d'Or restaurant.
Discovery of the dish, the chefs discover the menu they
will have to create on their own way.
