Aigues, France is the winner of the 6th
edition of the Culinary Festival Bernard
Loiseau.
His partner is the Chef de Partie
at Constance Belle Mare Plage, Mr Harrish Mungur.

The winning menu was composed of a starter, Heart of palm, leaf to leaf and « tombeau » tuna,
hot mango « rose of winds », lemon grass sauce and grilled peanuts and of a main course,
Bourgeois cooked at low temperature then lacquered. Crispy lime and stems, cannelloni of
Mauritian chards and ripe banana with preserved lemon.
